Ingredients
  

Salad
  • 4 medium fresh beets trimmed
  • 2 tbsp olive oil divided
  • salt to taste
  • black pepper to taste
  • 4 cups arugula
  • 0.5 cup goat cheese crumbled
  • 0.33 cup walnuts toasted
Balsamic Dressing
  • 3 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in foil, drizzle with olive oil, salt, and pepper.
  3. Roast 40–50 minutes until tender. Cool, peel, and slice.
  4. Toast walnuts in a skillet until fragrant.
  5. Whisk dressing ingredients together.
  6. Layer arugula, beets, goat cheese, and walnuts.
  7. Drizzle with dressing and serve immediately.

Notes

Add protein like grilled chicken or chickpeas to make it a full meal.
