Ingredients
  

Cake Batter
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 3 eggs large
  • 1 tbsp vanilla extract
  • 1 cup mashed ripe bananas
  • 0.75 cup buttermilk
  • 1 cup chopped walnuts
Cream Frosting
  • 1 cup heavy whipping cream
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. Whisk flour, baking powder, baking soda, and salt.
  3. Beat butter and sugar until fluffy.
  4. Add eggs one at a time, then vanilla.
  5. Mix in mashed bananas.
  6. Alternate adding dry ingredients and buttermilk.
  7. Fold in walnuts.
  8. Divide batter into pans and bake 30 minutes.
  9. Cool completely.
  10. Beat cream cheese, sugar, and vanilla.
  11. Whip cream separately and fold into mixture.
  12. Layer cake with frosting and chill before serving.

Notes

Use very ripe bananas for best flavor and moisture.
