Method
- Prepare an 8x8-inch pan by lightly buttering it.
- Mix sugar, cocoa, and salt in a heavy saucepan.
- Gradually add milk and stir until combined.
- Cook over medium heat, stirring constantly until mixture begins to boil.
- Add butter but do not stir; allow it to melt as mixture cooks.
- Cook to 234°F (soft-ball stage) without stirring.
- Remove from heat and cool to 110°F undisturbed.
- Add vanilla and beat until fudge thickens and loses shine.
- Spread into prepared pan and cool completely.
Notes
For best texture, do not stir once the mixture begins boiling. Use a candy thermometer for accuracy.
