Ingredients
  

Shrimp Filling
  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lime juiced
Quesadillas
  • 4 large tortillas
  • 1.5 cups shredded cheese
  • 2 tbsp butter or oil
Fresh Salsa
  • 2 tomatoes diced
  • 1 avocado diced
  • 0.25 cup red onion finely chopped
  • 0.25 cup cilantro chopped
  • 1 lime juiced
  • 0.25 tsp salt

Method
 

  1. Season shrimp with oil, spices, salt, pepper, and lime juice.
  2. Cook shrimp in skillet over medium-high heat 2–3 minutes per side until pink.
  3. Remove shrimp and chop into small pieces.
  4. Mix tomatoes, avocado, onion, cilantro, lime juice, and salt to make salsa.
  5. Place cheese and shrimp on half of each tortilla and fold over.
  6. Cook quesadillas in buttered skillet until golden and cheese melts.
  7. Slice into wedges and top with fresh salsa before serving.

Notes

Do not overcook shrimp or they will become rubbery. Add avocado to salsa just before serving for best color and texture.
