Ingredients
  

Short Ribs
  • 3 lb beef short ribs bone-in
  • 1 tbsp olive oil
  • 1 cup fresh cranberries
  • 1 cup red wine dry
  • 2 cups beef stock
Mashed Potatoes
  • 2 lb potatoes peeled
  • 0.5 cup heavy cream
  • 4 tbsp unsalted butter

Equipment

  • Dutch oven
  • Large pot
  • Potato masher
  • Cutting board

Method
 

  1. Season and sear short ribs until browned.
  2. Sauté aromatics and deglaze with wine.
  3. Add cranberries, stock, herbs, and short ribs.
  4. Cover and braise in oven until tender.
  5. Boil and mash potatoes with butter and cream.
  6. Reduce sauce slightly and serve ribs over mash.

Notes

This dish can be made a day ahead and reheated for deeper flavor.
