Ingredients
  

Dressing
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 1/2 tsp lemon zest optional

Equipment

  • Small mixing bowl

  • Citrus juicer
  • Garlic press

Method
 

  1. In a small bowl, whisk together lemon juice, honey, and Dijon mustard.
  2. Add minced garlic and mix well.
  3. Slowly drizzle in olive oil while whisking continuously until emulsified.
  4. Stir in salt, black pepper, and lemon zest if using.
  5. Taste and adjust seasoning as desired.
  6. Serve immediately or refrigerate in a sealed jar for up to 1 week. Shake before use.

Notes

Great as a salad dressing, marinade, or drizzle for roasted vegetables.
