- Season pork chops on both sides with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden. Remove and set aside.
- Lower heat and whisk together Dijon mustard, whole-grain mustard, honey, garlic, and water/broth in the skillet.
- Return pork chops to the pan, coating them in the sauce.
- Simmer for 5–7 minutes until pork reaches 145°F (63°C).
- Spoon extra sauce over the pork, garnish with herbs if desired, and serve warm.
Notes
For a creamier version, add 1/4 cup heavy cream to the sauce.
