Cookie Batter
  • 6 hard-boiled eggs peeled and cooled
  • 0.33 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp sour cream optional
  • 1 tsp vinegar or lemon juice
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp paprika plus more for garnish
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp chives or green onions finely chopped

Method
 

  1. Chop the hard-boiled eggs and place in a medium bowl.
  2. Stir in mayonnaise, mustard, sour cream, and vinegar or lemon juice.
  3. Add garlic powder, onion powder, paprika, salt, and pepper.
  4. Mash or blend until smooth or until preferred texture is reached.
  5. Fold in chives or green onions.
  6. Adjust seasoning and garnish with paprika.
  7. Refrigerate before serving for best flavor.

Notes

For extra richness, substitute half the mayonnaise with Greek yogurt or add crumbled bacon for texture.
