Cheesecake Batter
  • 24 oz cream cheese full-fat, softened
  • 1 cup granulated sugar
  • 4 eggs large, room temperature
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 0.5 tsp salt

Method
 

  1. Preheat oven to 425°F (220°C). Line a 9-inch springform pan with parchment paper.
  2. Beat cream cheese and sugar until completely smooth.
  3. Add eggs one at a time, mixing just until incorporated.
  4. Mix in heavy cream and vanilla extract.
  5. Add flour and salt; mix gently until smooth.
  6. Pour batter into prepared pan.
  7. Bake 40–45 minutes until deeply golden on top and jiggly in the center.
  8. Cool completely, then chill at least 4 hours before serving.

Notes

Top should appear very dark; this is essential for authentic flavor.
