Method
- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
- Mash bananas in a large bowl until mostly smooth.
- Stir in peanut butter, honey or maple syrup, egg, and vanilla.
- Add oats, cinnamon, baking powder, and salt. Mix well.
- Fold in chocolate chips if using.
- Spread mixture evenly into prepared pan and smooth the top.
- Bake for 22–28 minutes until set and lightly golden.
- Cool completely before slicing into bars.
Notes
Store in fridge for firmer texture or freeze for meal prep.
