Ingredients

  • 3 ripe bananas mashed
  • 2 cups rolled oats
  • 0.5 cup natural peanut butter
  • 0.33 cup honey or maple syrup
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Stir in peanut butter, honey or maple syrup, egg, and vanilla.
  4. Add oats, cinnamon, baking powder, and salt. Mix well.
  5. Fold in chocolate chips if using.
  6. Spread mixture evenly into prepared pan and smooth the top.
  7. Bake for 22–28 minutes until set and lightly golden.
  8. Cool completely before slicing into bars.

Notes

Store in fridge for firmer texture or freeze for meal prep.
