- Heat cream until steaming. Whisk yolks and sugar, then slowly whisk in cream.
- Cook mixture on low heat until thickened. Stir in vanilla and chill completely.
- Preheat oven to 350°F (175°C) and line baking sheets.
- Whisk flour, baking powder, and salt.
- Beat butter and sugar until fluffy. Add egg, yolks, vanilla, and cream.
- Mix dry ingredients into wet until dough forms.
- Scoop dough balls onto sheet and flatten slightly.
- Bake 12–15 minutes. Cool completely.
- Spread filling on one cookie and sandwich with another.
- Sprinkle sugar on top and torch until caramelized.
Notes
