Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 2 egg yolks
  • 1 tbsp vanilla extract
  • 0.25 cup heavy cream
Custard Filling
  • 1 cup heavy cream
  • 3 egg yolks
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
Brûlée Topping
  • 0.5 cup granulated sugar for torching

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat cream until steaming. Whisk yolks and sugar, then slowly whisk in cream.
  2. Cook mixture on low heat until thickened. Stir in vanilla and chill completely.
  3. Preheat oven to 350°F (175°C) and line baking sheets.
  4. Whisk flour, baking powder, and salt.
  5. Beat butter and sugar until fluffy. Add egg, yolks, vanilla, and cream.
  6. Mix dry ingredients into wet until dough forms.
  7. Scoop dough balls onto sheet and flatten slightly.
  8. Bake 12–15 minutes. Cool completely.
  9. Spread filling on one cookie and sandwich with another.
  10. Sprinkle sugar on top and torch until caramelized.

Notes

Torch topping just before serving for best crunch.
