Ingredients
  

Zucchini Skewers
  • 3 zucchini medium, sliced
  • 3 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 lemon zested and juiced
  • 2 tbsp fresh parsley chopped

Method
 

  1. Soak wooden skewers in water for 20 minutes if using.
  2. In a bowl, mix melted butter, olive oil, garlic, salt, pepper, Italian seasoning, lemon zest, and lemon juice.
  3. Toss sliced zucchini in the garlic butter mixture until evenly coated.
  4. Thread zucchini onto skewers, leaving small gaps between pieces.
  5. Grill over medium-high heat or roast at 425°F for 8–10 minutes, turning until tender and lightly charred.
  6. Remove from heat, garnish with fresh parsley, and serve warm.

Notes

Adjust garlic and lemon to taste. Can be grilled, roasted, or cooked on a stovetop grill pan.
