- Soak wooden skewers in water for 20 minutes if using.
- In a bowl, mix melted butter, olive oil, garlic, salt, pepper, Italian seasoning, lemon zest, and lemon juice.
- Toss sliced zucchini in the garlic butter mixture until evenly coated.
- Thread zucchini onto skewers, leaving small gaps between pieces.
- Grill over medium-high heat or roast at 425°F for 8–10 minutes, turning until tender and lightly charred.
- Remove from heat, garnish with fresh parsley, and serve warm.
Notes
Adjust garlic and lemon to taste. Can be grilled, roasted, or cooked on a stovetop grill pan.
