Ingredients
  

  • 1.5 lb beef chuck cubed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 1 zucchini diced
  • 1 cup green beans cut
  • 28 oz diced tomatoes
  • 2 tbsp tomato paste
  • 8 cups beef broth
  • 1 cup small pasta

Equipment

  • Large soup pot or Dutch oven
  • Wooden spoon
  • Chef’s knife

Method
 

  1. Brown beef in olive oil in a large pot.
  2. Sauté vegetables until softened.
  3. Add tomatoes, broth, herbs, and beef. Simmer until tender.
  4. Add pasta and cook until al dente.
