  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 2 cups corn kernels fresh or frozen
  • 2 jalapeños diced
  • 1 cup cheddar cheese shredded
  • 0.5 cup Monterey Jack cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp lime juice fresh
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in garlic, lime juice, spices, salt, and pepper.
  4. Fold in corn, jalapeños, and shredded cheeses.
  5. Transfer mixture to baking dish and spread evenly.
  6. Bake for 20–25 minutes until bubbly and lightly golden.
  7. Cool slightly, garnish if desired, and serve warm.

Notes

Adjust jalapeños to control spice level. Can be served hot or chilled.
