Ingredients
  

Meatloaf Base
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 0.5 cup milk
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili powder
Filling
  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 3 jalapeños diced
  • 2 tbsp green onions chopped
Glaze
  • 0.5 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Equipment

Method
 

  1. Preheat oven to 375°F and line a baking sheet.
  2. Mix ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire, and seasonings.
  3. Combine cream cheese, cheddar, jalapeños, and green onions.
  4. Shape half the meat mixture into a loaf base.
  5. Spread filling over center leaving edges clear.
  6. Top with remaining meat and seal edges.
  7. Mix glaze ingredients and spread on top.
  8. Bake 55–65 minutes until internal temperature reaches 160°F.
  9. Rest 10 minutes before slicing and serving.

Notes

Adjust jalapeño quantity to control heat level. Letting meatloaf rest prevents cheese from spilling out.
