Jamaican Brown Stew Chicken

Ingredients
  

Chicken
  • 2.5 lbs chicken pieces bone-in
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp allspice
  • 1 tsp thyme
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 4 cloves garlic minced
  • 1 onion sliced
  • 1 bell pepper sliced
  • 2 scallions chopped
  • 1 tomato chopped
  • 1 Scotch bonnet pepper whole optional
  • 2 tbsp browning sauce
  • 1.5 cups chicken broth

Equipment

  • Large skillet or Dutch oven
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Clean chicken with water and lemon or vinegar, then pat dry.
  2. Season chicken with spices, soy sauce, ketchup, garlic, scallions, and vegetables. Marinate at least 1 hour.
  3. Heat oil and brown chicken pieces on all sides.
  4. Add reserved marinade and vegetables.
  5. Pour in broth and browning sauce. Add Scotch bonnet.
  6. Cover and simmer 30–40 minutes until chicken is tender and sauce thickens.
  7. Taste and adjust seasoning.
  8. Serve hot with rice or sides.

Notes

Marinating overnight gives best flavor. Remove Scotch bonnet before serving.
