- Brown the Italian sausage in a large pot over medium-high heat.
- Add diced onions and cook until softened, then stir in garlic.
- Add tomato paste, oregano, basil, and red pepper flakes; cook briefly.
- Pour in broth and crushed tomatoes; bring to a boil.
- Add broken lasagna noodles and simmer until tender.
- Mix ricotta, mozzarella, and Parmesan in a bowl and season with salt and pepper.
- Serve soup with a dollop of the cheese mixture and garnish with basil.
Notes
Add extra broth when reheating, as noodles continue to absorb liquid.
