Ingredients
  

Soup
  • 1 lb Italian sausage
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes optional
  • 6 cups chicken broth
  • 28 oz crushed tomatoes
  • 8 lasagna noodles, broken
  • salt and pepper to taste
Cheese Mixture
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 0.5 cup grated Parmesan
  • salt and pepper to taste

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Brown the Italian sausage in a large pot over medium-high heat.
  2. Add diced onions and cook until softened, then stir in garlic.
  3. Add tomato paste, oregano, basil, and red pepper flakes; cook briefly.
  4. Pour in broth and crushed tomatoes; bring to a boil.
  5. Add broken lasagna noodles and simmer until tender.
  6. Mix ricotta, mozzarella, and Parmesan in a bowl and season with salt and pepper.
  7. Serve soup with a dollop of the cheese mixture and garnish with basil.

Notes

Add extra broth when reheating, as noodles continue to absorb liquid.
