Method
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Whisk olive oil, lemon juice, zest, garlic, salt, pepper, paprika, thyme, oregano, onion powder, and honey.
- Pat chicken thighs dry and coat thoroughly with marinade.
- Arrange chicken skin side up in baking dish.
- Marinate 15 minutes or up to 4 hours.
- Bake 35–40 minutes until internal temperature reaches 165°F.
- Broil 2–3 minutes for crisp skin if desired.
- Rest 5 minutes, garnish, and serve.
Notes
Marinating longer deepens flavor. Boneless thighs cook faster.
