Chicken
  • 6 chicken thighs bone-in skin-on
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 0.25 cup lemon juice fresh
  • 1 tbsp lemon zest
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
  • 0.5 tsp onion powder
  • 1 tbsp honey optional
Garnish
  • fresh parsley chopped
  • lemon slices

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Whisk olive oil, lemon juice, zest, garlic, salt, pepper, paprika, thyme, oregano, onion powder, and honey.
  3. Pat chicken thighs dry and coat thoroughly with marinade.
  4. Arrange chicken skin side up in baking dish.
  5. Marinate 15 minutes or up to 4 hours.
  6. Bake 35–40 minutes until internal temperature reaches 165°F.
  7. Broil 2–3 minutes for crisp skin if desired.
  8. Rest 5 minutes, garnish, and serve.

Notes

Marinating longer deepens flavor. Boneless thighs cook faster.
