Ingredients
  

Potatoes
  • 4 cups diced potatoes
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Taco Filling
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 0.5 cup water
  • 0.5 cup diced onion
Toppings
  • 1 cup shredded cheese
  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.5 cup corn
  • 0.5 cup black beans
  • 1 avocado sliced
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 2 tbsp cilantro chopped

Equipment

  • Baking sheet
  • Mixing bowl

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Toss diced potatoes with oil and seasonings.
  3. Roast 25–30 minutes until crispy.
  4. Cook onion in skillet with oil until soft.
  5. Add ground beef and cook until browned.
  6. Stir in taco seasoning and water, simmer 5 minutes.
  7. Divide potatoes into bowls.
  8. Top with taco meat and desired toppings.
