Ingredients
  

Bowl Base
  • 1.5 lbs sirloin or ribeye steak
  • 2 lbs potatoes diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tbsp milk or cream
  • 0.25 cup green onions chopped

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Roast potatoes for 30–35 minutes, flipping halfway.
  4. Season steak with salt and pepper.
  5. Sear steak in a hot skillet until desired doneness.
  6. Rest steak, then slice against the grain.
  7. Mix sour cream and milk until smooth.
  8. Assemble bowls and serve warm.
