Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper optional
  • 1 cup cold sparkling water
  • 1 egg large
Fish Fillets
  • 1 lb white fish fillets skinless, boneless
  • 0.5 cup all-purpose flour for dredging
  • oil for frying

Equipment

  • Mixing bowls
  • Deep skillet or Dutch oven
  • Wire rack
  • Whisk

Method
 

  1. Pat fish fillets dry and season lightly with salt and pepper.
  2. Dredge each fillet in 0.5 cup flour, shaking off excess.
  3. Whisk together flour, cornstarch, baking powder, salt, pepper, paprika, garlic powder, and cayenne. Add egg and cold sparkling water, whisk until smooth.
  4. Heat 2–3 inches of oil in a deep skillet to 350°F (175°C).
  5. Dip fillets into batter and let excess drip off.
  6. Carefully fry fillets 3–5 minutes per side until golden brown. Fry in batches if needed.
  7. Remove and drain on a wire rack over a baking sheet.
  8. Serve immediately with lemon wedges, parsley, and tartar sauce.

Notes

Keep batter cold for maximum crispiness. Do not overcrowd the pan while frying.
