- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Soak cut potatoes in cold water 20 minutes, then dry thoroughly.
- Toss potatoes with oil, Cajun seasoning, paprika, garlic powder, and salt.
- Spread in single layer on baking sheet.
- Bake 30–35 minutes, flipping halfway, until crispy.
- Melt butter in saucepan and whisk in flour.
- Slowly add milk while whisking until thickened.
- Stir in cheese and cayenne until smooth.
- Mix mayonnaise, hot sauce, and lemon juice.
- Place fries on platter, pour cheese sauce over, drizzle sauce, garnish, and serve.
Notes
For extra crispiness, bake fries twice or use an air fryer.
