Ingredients
  

Fries
  • 4 large russet potatoes cut into fries
  • 2 tbsp olive oil
  • 1.5 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
Cheese Sauce
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1.5 cups cheddar cheese shredded
  • 0.25 tsp cayenne pepper
Drizzle Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp hot sauce
  • 1 tsp lemon juice
Garnish
  • 2 tbsp parsley chopped
  • 1 jalapeño sliced

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Soak cut potatoes in cold water 20 minutes, then dry thoroughly.
  3. Toss potatoes with oil, Cajun seasoning, paprika, garlic powder, and salt.
  4. Spread in single layer on baking sheet.
  5. Bake 30–35 minutes, flipping halfway, until crispy.
  6. Melt butter in saucepan and whisk in flour.
  7. Slowly add milk while whisking until thickened.
  8. Stir in cheese and cayenne until smooth.
  9. Mix mayonnaise, hot sauce, and lemon juice.
  10. Place fries on platter, pour cheese sauce over, drizzle sauce, garnish, and serve.

Notes

For extra crispiness, bake fries twice or use an air fryer.
