Method
- Whisk coconut milk, sweetener, vanilla, lime juice, and salt until smooth.
- Add chia seeds and whisk thoroughly.
- Rest 5 minutes, whisk again, then refrigerate at least 4 hours.
- Blend half the mango into puree.
- Mash half the dragon fruit lightly.
- Divide pudding into two bowls.
- Mix mango puree into one bowl and dragon fruit into the other.
- Layer puddings in glasses and top with fruit.
Notes
Stir pudding twice during chilling for smooth texture. Adjust thickness with milk or chia seeds.
