Mango & Dragon Fruit Chia Pudding

Ingredients
  

Chia Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp lime juice
  • 1 pinch salt
Fruit Layers
  • 1 mango diced
  • 1 dragon fruit diced

  • Whisk
  • Glass jars or cups

Method
 

  1. Whisk coconut milk, sweetener, vanilla, lime juice, and salt until smooth.
  2. Add chia seeds and whisk thoroughly.
  3. Rest 5 minutes, whisk again, then refrigerate at least 4 hours.
  4. Blend half the mango into puree.
  5. Mash half the dragon fruit lightly.
  6. Divide pudding into two bowls.
  7. Mix mango puree into one bowl and dragon fruit into the other.
  8. Layer puddings in glasses and top with fruit.

Notes

Stir pudding twice during chilling for smooth texture. Adjust thickness with milk or chia seeds.
