Ingredients
  

  • 2 chicken breasts boneless, skinless
  • 12 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes sliced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning

Equipment

  • Large skillet
  • Large pot
  • Wooden spoon
  • Chef’s knife

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Sear chicken in olive oil until golden and cooked through. Remove and slice.
  4. Add butter and garlic to the skillet and sauté until fragrant.
  5. Stir in sun-dried tomatoes, cream, and Parmesan. Simmer until thickened.
  6. Add pasta and chicken back to the skillet. Toss and serve.

Notes

Add pasta water to loosen sauce if needed.
