Ingredients
  

Meatloaf
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 0.5 cup milk
  • 0.5 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp Italian seasoning
  • 1 cup shredded cheddar cheese for topping
Mashed Potatoes
  • 4 russet potatoes peeled and cubed
  • 4 tbsp butter
  • 0.75 cup warm milk
  • 1 tsp salt
  • 0.5 tsp pepper
  • 0.5 cup shredded cheddar cheese optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix ground beef, breadcrumbs, eggs, onion, garlic, milk, ketchup, and seasonings in a bowl.
  3. Transfer to loaf pan, shape, and top with ketchup.
  4. Bake 50–60 minutes, add cheese during last 10 minutes.
  5. Boil potatoes until tender, drain.
  6. Mash with butter and warm milk until creamy.
  7. Season with salt and pepper, add cheese if desired.
  8. Slice meatloaf and serve with mashed potatoes.

Notes

For extra flavor, mix a little cheese into the meatloaf.
