Ingredients
  

Meatloaf
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 onion finely diced
  • 2 eggs
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded, for topping
Glaze
  • 0.5 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
Mashed Potatoes
  • 3 lbs potatoes peeled and cubed
  • 4 tbsp butter
  • 0.75 cup milk
  • 1 cup cheddar cheese shredded
  • salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C). Line loaf pan with parchment paper.
  2. Combine ground beef, breadcrumbs, onion, eggs, Worcestershire, and spices. Mix gently.
  3. Shape into a loaf and place in pan.
  4. Mix ketchup, brown sugar, and mustard for the glaze.
  5. Spread half the glaze over the meatloaf and bake 45 minutes.
  6. Boil potatoes until tender, then mash with butter, milk, salt, pepper, and cheese.
  7. Add remaining glaze and shredded cheese to the meatloaf. Bake 15 more minutes.
  8. Rest 10 minutes before slicing. Serve with cheesy mashed potatoes.

Notes

For extra creaminess, replace milk with half-and-half.
