Ingredients
  

Chicken Marinade
  • 1.5 lb chicken thighs or breasts boneless
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 tsp oregano
  • 1 tsp paprika
  • 1 tsp cumin
  • 0.5 tsp coriander
  • 1 tsp salt
  • 0.5 tsp black pepper
Feta Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup feta cheese crumbled
  • 0.5 cucumber grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
Assembly
  • 6 pita breads
  • 1 cup cherry tomatoes halved
  • 0.5 red onion sliced
  • 1 cup lettuce shredded
  • 0.5 cup cucumbers sliced

Equipment

Method
 

  1. Whisk marinade ingredients together.
  2. Coat chicken and marinate at least 30 minutes.
  3. Mix tzatziki ingredients until creamy and chill.
  4. Cook chicken in skillet or grill pan until done.
  5. Rest chicken then slice thinly.
  6. Warm pita breads.
  7. Fill pita with chicken, vegetables, and sauce.
  8. Serve immediately.

Notes

For best flavor marinate chicken overnight. Sauce thickens as it chills.
