Method
- Whisk marinade ingredients and coat steak. Marinate at least 20 minutes.
- Boil water with salt, add couscous, cover and let sit 5 minutes. Fluff.
- Prepare vegetables and toppings.
- Mix yogurt sauce ingredients until smooth.
- Cook steak in hot skillet 3–5 minutes per side.
- Rest steak 5 minutes then slice thinly.
- Assemble bowls with couscous, toppings, and steak.
- Drizzle sauce and serve.

Swap grains or toppings to customize. Best served fresh but components store well separately.
