Ingredients
  

Steak Marinade
  • 1 lb flank or sirloin steak
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Base
  • 1 cup couscous
  • 2 cups water or broth
  • 0.5 tsp salt
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.5 red onion sliced
  • 0.5 cup Kalamata olives sliced
  • 0.5 cup feta cheese crumbled
  • 1 cup greens chopped
Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp fresh dill or parsley chopped

Equipment

Method
 

  1. Whisk marinade ingredients and coat steak. Marinate at least 20 minutes.
  2. Boil water with salt, add couscous, cover and let sit 5 minutes. Fluff.
  3. Prepare vegetables and toppings.
  4. Mix yogurt sauce ingredients until smooth.
  5. Cook steak in hot skillet 3–5 minutes per side.
  6. Rest steak 5 minutes then slice thinly.
  7. Assemble bowls with couscous, toppings, and steak.
  8. Drizzle sauce and serve.

Notes

Swap grains or toppings to customize. Best served fresh but components store well separately.
