- Preheat oven to 400°F (205°C).
- Arrange potatoes cut side down on a baking sheet.
- Combine melted butter, olive oil, and garlic, then pour over potatoes.
- Season with salt and pepper.
- Roast for 35–40 minutes until golden.
- Flip potatoes and carefully add broth around them.
- Sprinkle herbs over potatoes and return to oven.
- Roast another 20–25 minutes until tender. Garnish and serve.
Notes
For extra crisp edges, broil for 2–3 minutes at the end.
