Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
  • 0.5 cup unsalted butter melted
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh thyme or rosemary

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Arrange potatoes cut side down on a baking sheet.
  3. Combine melted butter, olive oil, and garlic, then pour over potatoes.
  4. Season with salt and pepper.
  5. Roast for 35–40 minutes until golden.
  6. Flip potatoes and carefully add broth around them.
  7. Sprinkle herbs over potatoes and return to oven.
  8. Roast another 20–25 minutes until tender. Garnish and serve.

Notes

For extra crisp edges, broil for 2–3 minutes at the end.
