Ingredients
  

Base
  • 6 English muffins split
  • 1 tbsp olive oil
  • 0.5 cup pizza sauce
Toppings
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 6 eggs large
  • 0.5 cup cooked breakfast sausage crumbled

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place English muffins cut-side up on the baking sheet and brush lightly with olive oil.
  3. Spread pizza sauce evenly over each muffin half.
  4. Sprinkle cheese and add desired toppings.
  5. Create a small well in the center and crack an egg into each.
  6. Bake for 12–15 minutes until eggs are set and cheese is melted.

Notes

Customize toppings as desired. For firmer yolks, bake longer.
