Ingredients
  

Crust & Filling
  • 1 refrigerated pie crust
  • 5 eggs large
  • 0.33 cup milk
  • 1 cup shredded cheese
  • 0.5 cup spinach chopped
  • 0.25 cup red bell pepper diced
  • 2 tbsp onion minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. Cut heart shapes from pie crust and press into muffin cavities.
  3. Whisk eggs, milk, salt, and pepper until smooth.
  4. Stir in cheese, spinach, bell pepper, and onion.
  5. Fill crusts 3/4 full with egg mixture.
  6. Bake 15–18 minutes until set and lightly golden.
  7. Cool slightly before removing and serving.
