Method
- Preheat oven to 350°F (175°C).
- Mix chocolate cookie crumbs, melted butter, and salt. Press into a pie dish.
- Bake crust for 8 minutes and cool slightly.
- Melt butter with sugar and cocoa in a saucepan. Remove from heat.
- Whisk in eggs one at a time. Add cream, vanilla, and salt.
- Pour filling into crust and bake for 30–35 minutes.
- Cool completely.
- Pour warm cream over chocolate chips, whisk to make ganache, and spread on cooled pie.
- Refrigerate at least 3 hours before slicing.
Notes
For clean slices, use a warm knife. Chill overnight for best flavor.
