Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter melted
  • 1 pinch salt
Filling
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 3 eggs large
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Ganache
  • 1 cup chocolate chips
  • 0.5 cup heavy cream warm

Equipment

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix chocolate cookie crumbs, melted butter, and salt. Press into a pie dish.
  3. Bake crust for 8 minutes and cool slightly.
  4. Melt butter with sugar and cocoa in a saucepan. Remove from heat.
  5. Whisk in eggs one at a time. Add cream, vanilla, and salt.
  6. Pour filling into crust and bake for 30–35 minutes.
  7. Cool completely.
  8. Pour warm cream over chocolate chips, whisk to make ganache, and spread on cooled pie.
  9. Refrigerate at least 3 hours before slicing.

Notes

For clean slices, use a warm knife. Chill overnight for best flavor.
