Bread Dough
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 3 tbsp molasses
  • 2 tbsp unsalted butter melted
  • 1.75 cups buttermilk

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Whisk together whole wheat flour, all-purpose flour, baking soda, salt, and brown sugar.
  3. In another bowl, mix molasses, melted butter, and buttermilk.
  4. Combine wet and dry ingredients, stirring gently until a soft dough forms.
  5. Shape dough into a round loaf and place on prepared baking sheet.
  6. Score a deep cross on top with a knife.
  7. Bake 35–40 minutes until browned and hollow-sounding when tapped.
  8. Cool on a wire rack before slicing and serving.

Do not overmix dough; gentle handling ensures tender bread.
