Method
- Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
- Bring water, butter, salt, and sugar to a boil in a saucepan.
- Add flour all at once, stirring until dough forms a ball and pulls away from sides.
- Let cool 5 minutes, then add eggs one at a time until smooth and glossy.
- Pipe 2-inch rounds onto baking sheet.
- Bake 10 minutes at 425°F, then reduce heat to 350°F and bake 20–25 more minutes.
- Cool completely, then slice in half.
- Beat heavy cream, powdered sugar, and vanilla to stiff peaks.
- Fill cream puffs with whipped cream and dust with powdered sugar.
Notes
For crispier shells, pierce puffs with a toothpick after baking.
