Mom’s Famous Cream Puffs

Light, airy cream puffs made with classic choux pastry and filled with fluffy vanilla whipped cream.

Ingredients
  

Cookie Batter
  • 1 cup water
  • 0.5 cup unsalted butter
  • 0.25 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup all-purpose flour
  • 4 eggs large
Filling
  • 2 cups heavy cream
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
  2. Bring water, butter, salt, and sugar to a boil in a saucepan.
  3. Add flour all at once, stirring until dough forms a ball and pulls away from sides.
  4. Let cool 5 minutes, then add eggs one at a time until smooth and glossy.
  5. Pipe 2-inch rounds onto baking sheet.
  6. Bake 10 minutes at 425°F, then reduce heat to 350°F and bake 20–25 more minutes.
  7. Cool completely, then slice in half.
  8. Beat heavy cream, powdered sugar, and vanilla to stiff peaks.
  9. Fill cream puffs with whipped cream and dust with powdered sugar.

Notes

For crispier shells, pierce puffs with a toothpick after baking.
