Mom's Slow Cooker Beef Stew

Ingredients
  

Stew Base
  • 2 lbs beef chuck roast cubed
  • 4 carrots sliced
  • 4 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 3 tbsp flour
  • 2 tbsp olive oil
  • 1 cup peas frozen

Method
 

  1. Coat beef cubes with flour, salt, and pepper.
  2. Brown beef in olive oil in a skillet until seared.
  3. Place carrots, potatoes, onion, and garlic in slow cooker.
  4. Add beef on top of vegetables.
  5. Mix broth, tomato paste, Worcestershire sauce, and herbs.
  6. Pour mixture into slow cooker and add bay leaf.
  7. Cook on LOW 8 hours or HIGH 4–5 hours.
  8. Add peas during final 15 minutes.
  9. Remove bay leaf, adjust seasoning, and serve.

Notes

For thicker stew, mash a few potatoes or add cornstarch slurry near end.
