Method
- Coat beef cubes with flour, salt, and pepper.
- Brown beef in olive oil in a skillet until seared.
- Place carrots, potatoes, onion, and garlic in slow cooker.
- Add beef on top of vegetables.
- Mix broth, tomato paste, Worcestershire sauce, and herbs.
- Pour mixture into slow cooker and add bay leaf.
- Cook on LOW 8 hours or HIGH 4–5 hours.
- Add peas during final 15 minutes.
- Remove bay leaf, adjust seasoning, and serve.
Notes
For thicker stew, mash a few potatoes or add cornstarch slurry near end.
