Ingredients
  

Salad Base
  • 4 cups mixed leafy greens
  • 1 cucumber sliced
  • 1 carrot shredded
  • 1 avocado sliced
  • 0.5 cup chickpeas cooked
  • 2 tbsp seeds pumpkin or sunflower
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tsp honey optional

Equipment

  • Large salad bowl
  • Small mixing bowl
  • Chef knife
  • Cutting board

Method
 

  1. Wash and dry all vegetables thoroughly.
  2. Arrange leafy greens in a large salad bowl.
  3. Top with cucumber, carrot, avocado, chickpeas, and seeds.
  4. Whisk dressing ingredients together in a small bowl.
  5. Drizzle dressing over salad and toss gently before serving.

Notes

Best served fresh. Add protein or grains for a heartier meal.
