Pie Filling
  • 2 cups graham cracker crumbs
  • 0.5 cup granulated sugar
  • 0.5 cup butter melted
  • 8 oz cream cheese softened
  • 12 oz evaporated milk
  • 1 box instant chocolate pudding mix
  • 1 cup powdered sugar
  • 1.5 cups chocolate chips melted
  • 1 cup whipped topping
  • 1 cup shredded coconut sweetened
  • 0.75 cup pecans chopped

Method
 

  1. Combine graham crumbs, sugar, and melted butter. Press into a pie dish and chill.
  2. Beat cream cheese until smooth, then add powdered sugar.
  3. Whisk pudding mix with evaporated milk until thick.
  4. Melt chocolate chips and stir into pudding mixture.
  5. Fold chocolate mixture into cream cheese mixture.
  6. Fold in whipped topping, coconut, and pecans.
  7. Spread filling into chilled crust and smooth the top.
  8. Chill at least 4 hours before serving.

Notes

Toast the coconut for deeper flavor.
