Method
- Line a springform pan with parchment paper.
- Mix graham cracker crumbs, melted butter, honey, and salt until combined.
- Press mixture firmly into pan bottom and chill 20 minutes.
- Warm heavy cream gently and steep lavender for 10 minutes, then strain and cool.
- Beat cream cheese until smooth.
- Mix in honey, vanilla, and powdered sugar.
- Whip cooled cream to soft peaks.
- Fold whipped cream into cream cheese mixture.
- Spread filling over crust and smooth top.
- Chill at least 4 hours until set.
- Garnish, slice, and serve.
Notes
Use culinary lavender only. Do not over-steep or flavor may become strong. Cheesecake sets best when chilled overnight.
