Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 2 tbsp honey
  • 1 pinch salt
Filling
  • 16 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 0.5 cup honey
  • 1 tbsp culinary lavender buds
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
Garnish
  • honey drizzle optional
  • dried lavender buds optional
  • whipped cream optional

Equipment

  • Springform pan
  • Hand mixer or stand mixer

Method
 

  1. Line a springform pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, honey, and salt until combined.
  3. Press mixture firmly into pan bottom and chill 20 minutes.
  4. Warm heavy cream gently and steep lavender for 10 minutes, then strain and cool.
  5. Beat cream cheese until smooth.
  6. Mix in honey, vanilla, and powdered sugar.
  7. Whip cooled cream to soft peaks.
  8. Fold whipped cream into cream cheese mixture.
  9. Spread filling over crust and smooth top.
  10. Chill at least 4 hours until set.
  11. Garnish, slice, and serve.

Notes

Use culinary lavender only. Do not over-steep or flavor may become strong. Cheesecake sets best when chilled overnight.
