Method
- Line a baking sheet with parchment paper.
- Melt butterscotch chips and peanut butter together in the microwave in short intervals, stirring until smooth.
- Stir in vanilla extract.
- Fold in chow mein noodles until evenly coated.
- Scoop spoonfuls of mixture onto the baking sheet, forming haystack shapes.
- Let set at room temperature for 30–45 minutes or refrigerate 10–15 minutes.
- Serve immediately or store in an airtight container.
Notes
For extra crunch, add nuts or pretzels. To make them softer, add more peanut butter.
