Ingredients
  

Cookie Batter
  • 2 cups butterscotch chips
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 4 cups crispy chow mein noodles
Filling
  • 0.5 cup crushed peanuts optional
  • 0.5 cup mini chocolate chips optional
  • 0.5 cup pretzel pieces optional
  • 2 tbsp sprinkles optional

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Line a baking sheet with parchment paper.
  2. Melt butterscotch chips and peanut butter together in the microwave in short intervals, stirring until smooth.
  3. Stir in vanilla extract.
  4. Fold in chow mein noodles until evenly coated.
  5. Scoop spoonfuls of mixture onto the baking sheet, forming haystack shapes.
  6. Let set at room temperature for 30–45 minutes or refrigerate 10–15 minutes.
  7. Serve immediately or store in an airtight container.

Notes

For extra crunch, add nuts or pretzels. To make them softer, add more peanut butter.
