Ingredients
  

  • 1 lb smoked sausage sliced
  • 1.5 lb baby potatoes halved
  • 1 bell pepper sliced
  • 1 onion sliced
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet.
  2. Toss potatoes with olive oil, garlic, and seasonings.
  3. Roast potatoes for 15 minutes.
  4. Add sausage, peppers, and onion. Toss well.
  5. Roast 20–25 minutes until golden and cooked through.

Notes

Use any sausage variety you prefer.
