- Preheat oven to 400°F (200°C). Line a baking sheet.
- Toss potatoes with olive oil, garlic, and seasonings.
- Roast potatoes for 15 minutes.
- Add sausage, peppers, and onion. Toss well.
- Roast 20–25 minutes until golden and cooked through.
