Main Ingredients
  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 15 oz diced tomatoes undrained
  • 8 oz tomato sauce
  • 2 cups beef broth
  • 15 oz kidney beans drained and rinsed
  • 1 cup corn
  • 8 oz spaghetti broken in half
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp oregano
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

Equipment

  • Large deep skillet or Dutch oven
  • Wooden spoon

Method
 

  1. Brown ground beef in a large skillet over medium heat until fully cooked.
  2. Add onion and cook until softened, then stir in garlic.
  3. Mix in tomatoes, tomato sauce, tomato paste, and seasonings.
  4. Pour in broth, beans, and corn and stir well.
  5. Add broken spaghetti and press into liquid.
  6. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.
  7. Sprinkle cheeses over top, cover, and let melt before serving.

Notes

Add extra broth when reheating if pasta thickens too much.
