Ingredients
  

Main
  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup white rice uncooked
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes with green chilies if desired
  • 2 cups beef broth
  • 2 tbsp taco seasoning
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 lime juiced

Method
 

  1. Brown ground beef in a large pot over medium heat. Drain excess fat if needed.
  2. Add onion and cook until softened. Stir in garlic and cook until fragrant.
  3. Stir in taco seasoning, cumin, paprika, and uncooked rice until evenly coated.
  4. Add diced tomatoes, broth, black beans, and corn. Stir well.
  5. Bring to a boil, reduce heat, cover, and simmer 18–20 minutes until rice is tender.
  6. Remove from heat, stir in lime juice, fluff with fork, and adjust seasoning.
  7. Serve in bowls with desired toppings.

Notes

Add toppings like cheese, avocado, sour cream, or salsa for extra flavor. Store leftovers in the fridge up to 4 days.
