Method
- Brown ground beef in a large pot over medium heat. Drain excess fat if needed.
- Add onion and cook until softened. Stir in garlic and cook until fragrant.
- Stir in taco seasoning, cumin, paprika, and uncooked rice until evenly coated.
- Add diced tomatoes, broth, black beans, and corn. Stir well.
- Bring to a boil, reduce heat, cover, and simmer 18–20 minutes until rice is tender.
- Remove from heat, stir in lime juice, fluff with fork, and adjust seasoning.
- Serve in bowls with desired toppings.
Notes
Add toppings like cheese, avocado, sour cream, or salsa for extra flavor. Store leftovers in the fridge up to 4 days.
