Casserole
  • 10 cups brioche bread cubed, day-old
  • 8 eggs large
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 0.75 cup brown sugar packed
  • 2 tbsp granulated sugar
  • 2 tsp vanilla extract
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cubed

Method
 

  1. Grease a 9x13-inch baking dish with butter.
  2. Spread bread cubes evenly into the dish.
  3. Whisk eggs, milk, cream, sugars, vanilla, spices, and salt until smooth.
  4. Pour custard evenly over bread.
  5. Dot with butter, cover, and refrigerate overnight.
  6. Preheat oven to 350°F (175°C).
  7. Bake uncovered for 45–50 minutes until golden and set.
  8. Rest briefly, then serve warm with maple syrup.

Notes

Let casserole sit at room temperature 15 minutes before baking for even cooking.
