Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook sausage in a skillet until browned; drain excess grease.
- Whisk pancake mix, milk, eggs, butter, maple syrup, and vanilla until smooth.
- Pour half of the batter into the baking dish and spread evenly.
- Sprinkle sausage evenly over the batter.
- Top with remaining batter and spread gently.
- Bake for 30–35 minutes until golden and set.
- Rest briefly, slice, and serve warm with maple syrup.
Notes
Can be assembled the night before and baked in the morning. Freezer-friendly.
