Ingredients
  

Meatloaf Mixture
  • 1.5 lbs ground chicken
  • 1 cup panko breadcrumbs
  • 0.75 cup Parmesan cheese freshly grated
  • 1 egg large
  • 0.5 cup grated onion with juices
  • 3 cloves garlic minced
  • 1 tbsp Italian seasoning
  • 0.5 tsp oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 0.25 cup milk
  • 2 tbsp fresh parsley chopped
Glaze
  • 0.5 cup marinara sauce or ketchup
  • additional Parmesan for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix breadcrumbs, Parmesan, Italian seasoning, oregano, paprika, salt, and pepper in a bowl.
  3. Add egg, grated onion, garlic, olive oil, milk, and Worcestershire sauce. Stir gently.
  4. Fold in ground chicken and parsley until just combined.
  5. Shape into a loaf on the prepared baking sheet.
  6. Brush with marinara or ketchup and sprinkle with Parmesan.
  7. Bake for 50–60 minutes or until internal temperature reaches 165°F (74°C).
  8. Rest 10 minutes before slicing and serving.

Notes

For extra flavor, add fresh basil or mozzarella cubes inside the meatloaf.
