Ingredients
  

  • 12 oz pasta fettuccine or penne
  • 2 cups mushrooms sliced
  • 3 cups fresh spinach
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese freshly grated
  • salt to taste
  • black pepper to taste

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Add mushrooms and cook until golden and tender.
  4. Stir in garlic and cook until fragrant.
  5. Pour in cream and simmer gently.
  6. Add parmesan cheese and stir until smooth.
  7. Add spinach and cook until wilted.
  8. Toss pasta with sauce, adjusting with pasta water if needed.

Notes

Use freshly grated parmesan for best flavor and texture.
