Ingredients
  

Zucchini Fries
  • 3 zucchini cut into sticks
  • 2 eggs large
  • 1 cup Parmesan cheese grated
  • 1 cup breadcrumbs panko preferred
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil or cooking spray

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment and place a wire rack on top.
  2. Whisk eggs in a shallow bowl. Combine Parmesan, breadcrumbs, and spices in another bowl.
  3. Dip zucchini sticks into egg, then coat evenly with Parmesan mixture.
  4. Arrange fries on wire rack and lightly drizzle with olive oil.
  5. Bake for 20–25 minutes, flipping halfway, until golden and crispy.

Notes

Serve immediately with dipping sauce for best texture.
