Ingredients
  

  • 6 cups broccoli florets fresh or frozen
  • 2 cups sharp cheddar cheese shredded
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup mayonnaise
  • 2 eggs large
  • 1 cup buttery crackers crushed
  • 4 tbsp butter melted
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Blanch broccoli in boiling water for 2–3 minutes, then drain well.
  3. In a large bowl, whisk together soup, mayonnaise, eggs, salt, and pepper.
  4. Stir in shredded cheddar cheese and broccoli.
  5. Transfer mixture to prepared baking dish.
  6. Mix crushed crackers with melted butter and sprinkle on top.
  7. Bake uncovered for 35–40 minutes until golden and bubbly.

Notes

Add the cracker topping just before baking if preparing ahead.
