Method
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Blanch broccoli in boiling water for 2–3 minutes, then drain well.
- In a large bowl, whisk together soup, mayonnaise, eggs, salt, and pepper.
- Stir in shredded cheddar cheese and broccoli.
- Transfer mixture to prepared baking dish.
- Mix crushed crackers with melted butter and sprinkle on top.
- Bake uncovered for 35–40 minutes until golden and bubbly.
Notes
Add the cracker topping just before baking if preparing ahead.
