Method
- Combine peanut butter, softened butter, powdered sugar, and vanilla until smooth.
- Roll mixture into balls and place on a parchment-lined baking sheet.
- Freeze for 20–30 minutes until firm.
- Melt chocolate chips with coconut oil in the microwave until smooth.
- Dip peanut butter balls into melted chocolate, coating evenly.
- Place dipped balls back on baking sheet and refrigerate until chocolate hardens.
- Store in an airtight container in fridge or freezer.
Notes
For a Buckeye-style version, leave the top portion of each ball uncoated.
