Ingredients
  

Cookie Batter
  • 1.5 cups creamy peanut butter
  • 0.5 cup unsalted butter softened
  • 2.5 cups powdered sugar
  • 1 tsp vanilla extract
  • baking soda
  • salt
  • cinnamon
  • nutmeg
  • cloves
Filling
  • 2 cups chocolate chips melted
  • 1 tbsp coconut oil optional
  • cream or milk

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Combine peanut butter, softened butter, powdered sugar, and vanilla until smooth.
  2. Roll mixture into balls and place on a parchment-lined baking sheet.
  3. Freeze for 20–30 minutes until firm.
  4. Melt chocolate chips with coconut oil in the microwave until smooth.
  5. Dip peanut butter balls into melted chocolate, coating evenly.
  6. Place dipped balls back on baking sheet and refrigerate until chocolate hardens.
  7. Store in an airtight container in fridge or freezer.

Notes

For a Buckeye-style version, leave the top portion of each ball uncoated.
