Ingredients
  

Cookie Batter
  • 2 cups creamy peanut butter
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp salt optional
  • 2 cups crushed graham crackers
Filling
  • 3 cups semi-sweet chocolate chips
  • 2 tbsp coconut oil or shortening
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream optional

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Beat softened butter and peanut butter until smooth.
  2. Add vanilla, salt, and powdered sugar, mixing until a thick dough forms.
  3. Fold in crushed graham crackers until combined.
  4. Roll mixture into 1-inch balls and chill 20–30 minutes.
  5. Melt chocolate with coconut oil in the microwave until smooth.
  6. Dip chilled balls into chocolate, letting excess drip off.
  7. Place on parchment-lined tray and chill until set.
  8. Store in airtight container in fridge or freezer.

Notes

Use creamy peanut butter for best texture. Chill before dipping for cleaner coating.
